GREEN PEA HUMMUS

Ingredients:

  • 250 grcooked chickpea
  • 100 grfrozen green pea
  • 25 graquafaba (water from the chickpea can - or water)
  • 10 grgarlic
  • 5 grfresh ginger
  • 20 grtahini sesame paste
  • 10 grlemon juice
  • 25 grspinach leaves, fresh
  • to tastefresh coriander (if you like)

Method:

  1. Place the frozen green peas in a bowl with hot water to defrost them.
  2. In a high-speed or hand blender, combine and blend until smooth, the cooked chickpeas, defrosted peas, garlic, ginger, and aquafaba.
  3. Add the remaining ingredients (except the fresh coriander) and blend until creamy. Adjust with water to rich your desired consistency.
  4. Add the coriander and pulse just a few times to keep some texture.
