ALMOND PINEAPPLE WAFFLE

Ingredients:

  • 40 gregg white
  • 15 grlupin flour
  • 10 gralmond flour
  • 10 groat flour
  • 20 grsoy yogurt sugar free
  • 20 grplant-based milk sugar free
  • 25 grzucchini, grated
  • as neededbaking soda + a.c. vinegar

Toppings:

  • 100 grsoy yogurt sugar free
  • pinchstevia (optional)
  • 5 grvegan protein powder vanilla flavour
  • 40 grbanana
  • 70 grpineapple
  • Hand fullwild blueberry or blackcurrant
  • 10 gr100% pistachio butter

Method:

  1. Cut the fruit into small chunks and set aside.
  2. In the meantime take a small bowl, mix soy yogurt, protein powder. Set aside.
  3. Whisk all the waffle ingredients together until smooth, then pour the mixture into a silicone molde.
  4. Cook in the air fryer for 15-17 minutes at 165°C. Once done, remove and let it cool for about 10-15 minutes.
  5. Carefully remove the waffle from the silicone mold and place it on a plate, spread the yogurt mixture on top, add the pre-cut fruit, and finish with a drizzle of pistachio butter.
