•In the meantime take a small bowl, mix soy yogurt, protein powder. Set aside.
•Whisk all the waffle ingredients together until smooth, then pour the mixture into a silicone molde.
•Cook in the air fryer for 15-17 minutes at 165°C. Once done, remove and let it cool for about 10-15 minutes.
•Carefully remove the waffle from the silicone mold and place it on a plate, spread the yogurt mixture on top, add the pre-cut fruit, and finish with a drizzle of pistachio butter.
