RUSTIC APPLE LOAF

Ingredients:

  • 80 grbuckwheat flour
  • 40 grrice flour
  • 30 grhazelnut flour
  • 10 grflax seeds
  • 100 grwater (or as much is needed)
  • 1orange, juice + zest
  • 4dry figs (or 6 dates)
  • 500 grapples (half grated / half chopped in chunks)
  • 1 grstevia
  • to tastebaking soda + a.c. vinegar
  • to tastecinnamon
  • to tastenut meg

Method:

  1. Combine the flours, flax seeds and orange zest in one bowl.
  2. In another bowl, blend water, orange juice, figs until smooth, then pour this liquid into the dry ingredients and mix thoroughly.
  3. Add the spices, grated apples, and 1/3 chunks of chopped apples, stirring very well to incorporate.
  4. Stir in the baking soda and vinegar and transfer the batter into your plum-cake tin.
  5. Spread the chopped apples on top and gently press them into the dough.
  6. Bake in the oven at 185°C for 45 minutes, or until a toothpick inserted into the centre comes out almost clean.
