RUSTIC APPLE LOAF

Ingredients:
80 gr
buckwheat flour
40 gr
rice flour
30 gr
hazelnut flour
10 gr
flax seeds
100 gr
water (or as much is needed)
1
orange, juice + zest
4
dry figs (or 6 dates)
500 gr
apples (half grated / half chopped in chunks)
1 gr
stevia
to taste
baking soda + a.c. vinegar
to taste
cinnamon
to taste
nut meg
Method:
•
Combine the flours, flax seeds and orange zest in one bowl.
•
In another bowl, blend water, orange juice, figs until smooth, then pour this liquid into the dry ingredients and mix thoroughly.
•
Add the spices, grated apples, and 1/3 chunks of chopped apples, stirring very well to incorporate.
•
Stir in the baking soda and vinegar and transfer the batter into your plum-cake tin.
•
Spread the chopped apples on top and gently press them into the dough.
•
Bake in the oven at 185°C for 45 minutes, or until a toothpick inserted into the centre comes out almost clean.
